Oven Blue

why do garlic turn blue every time i put them in the oven?
Depends on how you cook it. If you are doing it on its own, then leave the bulbs whole, in the skin and bake on foil with a little olive oil. If you are roasting them with potatoes, then peel the cloves and chuck them in with the potatoes about half way through. Not sure why they are turning blue, but I have seen that happen before - possibly old garlic, or maybe it has been exposed to acidic material, eg vinegar.
